Spicy guacamole with smoky undertones of smoked garlic and jalapeños sits atop firm red tomatoes. This is not just your everyday guacamole, it has a special kick! It is a great accompaniment to chipotle.
Smoked Guacamole on Tomato Rings
INGREDIENTS
2 large ripe avocados
1 small jalapeño
2-3 cloves of garlic or chopped raw onions
Fresh lime/lemon juice
Chopped cilantro
Ripe firm red tomatoes
PREPARATION
Smoke the jalapeño and garlic over a low flame. Scrape off the outer peel of the smoked jalapeño and garlic off with a knife. Remove the seeds of the jalapeño if you don’t want it too spicy. Chop both the jalapeño and garlic really fine. Slice the avocados into two halves, using a spoon gently scoop out the flesh from each half.
Sprinkle with lime juice/lemon juice immediately to prevent browning. Use a fork mash the avocados. Gently stir in the finely chopped smoked jalapeño and garlic. Add a generous squeeze of lime juice, cumin powder & lots of chopped cilantro. Top the tomato slices with the guacamole, garnish with a pickled jalapeño slice and add a dash of lemon juice and cilantro!
