Paav Bhaji (bread and veg)

This is another one of those lip-smacking meals that you can find on every street side in India. Tempered in butter and served with dinner buns or paav - it's a treat for the taste buds. Take the butter out and you still have a finger-licking veg mix to accompany a hearty Kenzai dinner.

Paav Bhaji (Bread and Veg)

INGREDIENTS

Boiled & mashed potato - 1
Steamed cauliflower - 200 grams
Steamed carrot - 100 grams
Capsicum (peppers) - finely cut red, green & yellow- 20 grams each
French beans - 50 grams finely cut
Tomatoes - 2 large- diced
1 Onion - finely cut
Garlic - 6 cloves paste
Oil - 2 tsp
Paav bhaji masala - 2 tsp

PREPARATION

In a wok, heat oil, sauté garlic & chopped onions for 2 minutes, until the raw smell is gone. Then add the bell peppers and french beans and sauté for about a minute. Next, add the tomatoes and pav bhaji masala. Cook till tomatoes are done. Add all the steamed veggies and mash them all to a semi liquid smooth state with a masher. Cover and cook for a 3 minutes on low flame. Keep stirring to keep the bhaji from sticking to the vessel.
Garnish with coriander and lemon juice drops and serve hot.
