These fajitas bring a lot of spicy flavor to otherwise dreary chicken breasts. They are an easy way to combine your vegetables, carbs and protein in one easy package and they only take 30-45 minutes to prepare. Greek yogurt adds the flavor of sour cream without the fat.
1 pound boneless, skinless chicken breasts, cut into strips
2 tsp chili powder or ground cayenne red pepper powder
2 tsp cumin
½ tsp garlic powder
½ tsp dried oregano
1 onion, sliced
1 tomato, chopped
1-2 bell peppers, seeded and sliced (red, green, or yellow)
Greek yogurt
1 lime
Whole wheat tortillas
Preheat the oven to 400 degrees. Combine the chili powder, cumin, garlic powder, dried oregano and coat the chicken well with the seasoning mixture. Add the tomatoes, peppers, and onions and stir to combine, Bake uncovered for 25 minutes or until chicken is cooked through and the vegetables are tender. Serve on tortillas with some avocado, cilantro, 1tsp of low fat greek or strained yogurt and lime. Add more spice for those of you who like it hot!
