Chicken Saag

Chicken Saag is a simple dish that brings out the subtle flavours of fennel & garam masala. This dish tastes as good right off the heat as after a day with the flavours coming together over time.

Serves 3-4 people.

Chicken Saag

INGREDIENTS

Fennel seeds- 1 tsp
Finely chopped onion -1 mid-sized
Finely chopped ginger -1/2 inch
Finely chopped garlic - 6 cloves
Chopped tomato -1 large
Chilli powder - to taste
Turmeric powder - 1/2 tsp
Chicken breast - 1-2
Spinach - 10-15 leaves
Garam masala- 1 tsp
Salt - a pinch
Oil -2 tsp

Note: Make use of the food process to finely chop onion, garlic & ginger together. Blanch the spinach leaves for 2 mins. Cool and make into fine paste.

PREPARATION

Heat oil in a non-stick wok, add fennel on low heat and stir for a min. Then add the chopped ginger-garlic-onions to it and stir for 3 mins. Check that the raw smell of garlic is gone. Add the chopped tomatoes, turmeric, chilli powder and salt. Cook for another 3 mins till the tomatoes leave out oil. Now add the chicken and cook till half done. Lastly add the spinach paste & garam masala and cook until chicken is cooked.
