Boneless, skinless chicken breasts
Water
Bay leaf (1~2 leaves)
Pot with lid (preferably a glass lid)
Optional- Peppercorns, root vegetables such as carrots, celery, herbs such as thyme
Place the chicken breasts in a pot just large enough to fit the chicken in a single layer. Pour enough water to cover the chicken by 2cm or so, add the bay leaf and any other optional ingredients. Place lid and bring to a boil over medium high heat. Once the water is boiling, reduce heat to low and simmer for 10~15min. Turn heat off and let it sit for 15min.
Depending on the size of your chicken, the cooking time will vary but there should be no trace of pink in the center. Transfer the chicken to a container with an air tight lid, add the liquid over the chicken to prevent them from drying out and let it cool. Refrigerate up to 3 days.
