Braised Chicken

This recipe takes a short time to cook, and takes care of your veggies and protein in one pot. The rice vinegar tenderizes the chicken and the vegetables add sweetness. You won’t miss the salt!

Braised Chicken

INGREDIENTS

300g chicken thighs (skinless, boneless, cut excess fat off)
2cm ginger knob (thinly sliced)
1 clove of garlic (thinly sliced)

1-2 small onions (sliced)
1/2 sweet bell pepper (sliced)
5-10 mushrooms (cut in half or quarters)
cilantro (optional for topping)

1/4 cup rice vinegar
1/4 cup water
1/4 tsp whole grain dijon mustard

PREPARATION

Put ginger, garlic and chicken in a medium-sized non-stick pot. Turn the heat up to medium high and cook both sides of the chicken. Add vinegar, cover pot and simmer on low for 5 minutes. Add onions, bell peppers, mushrooms, mustard and water. Cover, bring to boil on high then simmer on low for 15 minutes. Occasionally stir the veggies around and you are DONE! Shred the chicken inside the pot and there should be enough juice left. Chopped fresh cilantro goes very well with it. For those who want it spicy, add chili peppers! Serve with a side of white or brown rice.
